    Discover the magic of Lion's Mane: 3 delicious recipes for a healthy mind

    Lion's Mane (Hericium erinaceus), is not only a fascinating mushroom to see, but also a mushroom with impressive health benefits on the body and mind.

    In fact, this mushroom is known for its ability to improve cognitive functions, support memory and reduce stress. You may know the wig mushroom from the Stamets Stack microdosing method, where its combination with psilocybin truffles and nicaine makes for a particularly potent combination.

    But did you know that (fresh) Lion's Mane is also excellent for use in dishes? In this article we introduce you to the special world of Lion's Mane through three delicious and easy to prepare recipes.

    Recipe 1: Lion's Mane stir fry with garlic and soy sauce

    Ingredients:

    • 200 grams of fresh Lion's Mane mushrooms (available at the market or organic supermarket)
    • 2 cloves of garlic, finely chopped
    • 2 tablespoons of soy sauce (or tamari, for a gluten-free option)
    • 1 tablespoon of sesame oil
    • 1 teaspoon fresh ginger, finely chopped
    • A handful of fresh green vegetables (e.g. broccoli or spinach)
    • Salt and pepper to taste
    • Optional: red pepper flakes for a spicy twist

    Preparation:

    Slice the Lion's Mane mushrooms.

    Heat the sesame oil in a pan over medium-high heat and add the garlic and ginger. Fry them until fragrant.

    Add the Lion's Mane mushrooms and stir-fry for 4-5 minutes until golden brown.

    Add the green vegetables and stir-fry for another 2-3 minutes until crisp.

    Pour the soy sauce over the dish and season with salt, pepper and red pepper flakes (if desired). 

    Stir well and serve immediately.

    Recipe 2: Lion's Mane mushroom soup

    Ingredients:

    • 250 grams fresh Lion's Mane mushrooms, chopped into pieces
    • 1 onion, finely chopped
    • 2 cloves of garlic, finely chopped
    • 1 potato, peeled and diced
    • 1 liter vegetable stock
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • Fresh parsley, half bunch, for garnish

    Preparation:

    Heat the olive oil in a large soup pan and add the onion and garlic. Sauté until soft and fragrant.

    Add the Lion's Mane mushrooms and potato and sauté for another 5 minutes.

    Pour the vegetable stock into the pan and bring to a boil. Simmer until the potato is tender (about 20 minutes).

    Puree the soup with a hand blender to a smooth consistency.

    Season to taste with salt and pepper. Garnish with fresh parsley and serve hot.

    Recipe 3: Lion's Mane Iced coffee with vanilla

    Ingredients:

    • 1 cup freshly brewed coffee
    • 1/2 cup almond milk (or any milk of your choice)
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon Lion's Mane mushroom powder or drops (tincture)
    • Ice cubes of your choice 

    Preparation:

    Let the freshly brewed coffee cool to room temperature.

    Mix the cooled coffee, almond milk, vanilla extract and Lion's Mane mushroom powder in a blender.

    Add ice cubes and blend to a creamy, refreshing iced coffee.

    Pour into a glass, add a pinch of cinnamon for garnish if desired, and enjoy this revitalizing Lion's Mane iced coffee.
